Olmeca Altos is a super-premium tequila made from 100% agave and tahona liquid. This tequila is produced in the heart of Los Altos, at an altitude of 2,104 meters above sea level, in the western state of Jalisco, Mexico. Thanks to the influence of the earth, the liquid acquires citrus, fruity, and sweet notes.

History

This tequila was born in 2009 thanks to a collaboration between Olmeca master distiller Jesús Hernández and two famous British bartenders of international renown: the late Henry Besant and Dré Masso. Their goal was to create a premium 100% agave tequila, perfect for cocktails, but equally smooth and delicious when enjoyed neat.

Production

Altos is made in part by using the traditional Tahona stone method, a 500-year-old ancestral technique used to crush cooked agave. This method is fundamental to the unique process of all Altos tequilas. Subsequently, the liquid is distilled in small copper stills. We recognize that distilling our best tequilas involves harvesting the best agaves from the red soils of Los Altos. The region's ideal climate and mineral-rich soil contribute to creating a tequila that is extraordinarily smooth, but with a complex flavor.

• (2 PARTS) 2 OUNCES/60ML ALTOS PLATA OR ALTOS REPOSADO

• (1 PART) 1 OUNCE/30ML FAVOURITE CITRUS (1 LIME OR 1/2 LEMON)

• (HALF PART) HALF OUNCE/15ML FAVOURITE SWEETENER (AGAVE/CANE/HONEY)

*If you like salt on the rim the first thing to do is press a piece of citrus around the lip of the glass and then dip the glass into a bowl of quality crushed salt. You can opt for an entire salted rim of a half rim.

METHOD:

-Start by cutting either a whole lime or half a lemon into small pieces. Squeeze and throw into shaker.

-Next add approximately half an ounce/15ml of your favourite sweetening agent. The amount you use is really up to you. Agave nectar is one of our favourites, but experiment with what is local to you.

-Now add two ounces/60ml of either altos plata or reposado.

-Fill the shaker with a scoop of cubed ice, close the shaker and shake vigorously.

-Open shaker and directly transfer to an old fashioned or similar glass. Top with more ice if needed.
